摘 要:在果蔬成熟过程中乙烯发挥着重要的作用,促进成熟软化、加速着色从而增加商品性。乙烯响应因子(ethylene response factor,ERF)是果蔬乙烯代谢过程中的重要因子之一,可以与其他基因协同调控果蔬的颜色变化,促进成熟与着色。随着居民生活水平的提高,对果蔬的要求不仅要富含营养价值,更要满足外观要求,因此研究果蔬颜色有助于增加其商品性从而提高消费者购买力。本研究对ERF调节叶绿素降解、类胡萝卜素生物合成和花青素合成与积累相关基因的研究结果进行了总结,进而指出了ERF调控果蔬成熟过程颜色变化的研究重点和方向,以期为相关研究和高品质果蔬生产提供指导。Ethylene plays an important role in the ripening process of fruits and vegetables,promoting ripening and softening,accelerating the coloring and increasing the commerciality.Ethylene response factor(ERF)is one of the important factors in the ethylene metabolism of fruits and vegetables.It can coordinate with other genes to regulate the color changes of fruits and vegetables,and promote ripening and coloring.With the improvement of residents’living standards,the requirements for fruits and vegetables must not only be rich in nutritional value,but also meet the appearance requirements.Therefore,studying the color of fruits and vegetables will help increase their commercial properties and increase consumers’purchasing power.This paper summarizes the research results of ERF on the regulation of genes related to chlorophyll degradation,carotenoid biosynthesis and anthocyanin synthesis and accumulation,and then points out the research focus and direction of ERF regulating the color change of fruits and vegetables during the ripening process,in order to provide guidance for relevant research and high-quality fruit and vegetable production.
