摘 要:伴随猪饲粮“节本增效”的理念深入,食品加工技术的逐步升级,富含饲粮纤维的食品加工副产物进一步被广泛应用。饲粮纤维以往被认为对动物营养物质利用具有负面作用,但随着纤维化学结构和理化特性深入的研究,人们发现饲粮纤维不仅以后肠发酵供能形式发挥营养作用,而且其理化特性对胃肠道食糜传递、营养物质酶解、内源物质分泌和营养物质吸收等消化吸收过程更具有重要的生理作用。本文对饲粮纤维的主要化学成分和理化特性及其对猪胃肠道营养物质消化的影响展开综述,重点阐述常规饲料原料的纤维理化特性及其对猪的主要营养物质(蛋白质、淀粉和脂质)消化的影响。基于饲粮纤维理化特性,为猪的营养物质合理利用提供参考。With the deepening of the concept of“cost-saving and efficiency enhancement”of pig diet and the gradual upgrading of food processing technology,food processing by-products rich in dietary fiber are further widely used.Dietary fiber is considered to animal nutrition substances before that use have a negative effect,but with the further study of fiber chemical structure and physicochemical properties,it was found that the dietary fiber as intestinal fermentation power form not only give play to the role of nutrition,and its physicochemical properties of the gastrointestinal tract chyme passing,nutrient enzymolysis,endogenous substance secretion and nutrient absorption of digestion and absorption process have more important physiological functions.In this paper,the main chemical components and physicochemical properties of dietary fiber and their effects on gastrointestinal nutrient digestion of pigs were reviewed,with emphasis on the physicochemical properties of fiber of conventional feedstuffs and their effects on digestion of main nutrients(protein,starch and lipid)in pigs.Based on the physicochemical characteristics of dietary fiber,this study provided reference for rational utilization of nutrients in pigs.
