摘 要:富含不饱和脂肪酸的籽实(油)具有提高奶牛泌乳性能的功能,其对乳脂品质的改善与不饱和脂肪酸瘤胃微生物氢化作用密切相关。不饱和脂肪酸经瘤胃生物氢化形成的反式脂肪酸t11 C18:1是乳脂主要共轭亚油酸c9t11 C18:2生成的重要前体物质,但部分瘤胃氢化中间产物会抑制乳脂形成。本文综述了不饱和脂肪酸瘤胃微生物氢化路径、不饱和脂肪酸及其瘤胃生物氢化中间产物对奶牛泌乳性能的影响,旨在为调控不饱和脂肪酸瘤胃微生物氢化、提高奶牛泌乳性能和改善牛乳脂肪酸组成等提供参考依据。The seeds or oil rich in unsaturated fatty acids can improve lactation performance of dairy cattle, and their function on improving the quality of milk fat is closely associated with rumen microbial biohydrogenation of unsaturated fatty acids.Among the rumen biohydrogenation intermediates of unsaturated fatty acids, t11 C18:1 is an important precursor to the main dominant conjugated linoleic acids c9t11 C18:2 in milk fat, while some biohydrogenation intermediates inhibit the synthesis of milk fat. Thus, the manuscript described the microbial biohydrogenation pathway of unsaturated fatty acids, the function of unsaturated fatty acids and their biohydrogenation intermediates on lactation performance of dairy cattle in detail to provide reference for regulating rumen biohydrogenation of unsaturated fatty acids, and to provide reference for improving lactating performance and milk fatty acid composition of dairy cattle.
