摘  要:试验旨在研究复合营养素(含发酵麸皮多糖、丁香酚、肉桂醛及辣椒油树脂)对羔羊生长性能、屠宰性能、背最长肌肉品质及抗氧化指标的影响。选取体重(29.92±2.52)kg、健康的杜×寒杂交母羔36只,随机分为3组,每组6个重复,每个重复2只羊。对照组饲喂基础饲粮,试验组分别饲喂添加2.5、5g/kg复合营养素的试验饲粮。试验期74 d,预试期14 d,正试期60 d。结果表明:与对照组相比,饲粮中添加2.5、5 g/kg复合营养素可提高羔羊干物质采食量及背最长肌中天冬氨酸、甘氨酸、缬氨酸、异亮氨酸、酪氨酸、苯丙氨酸、肉豆蔻酸、十五烷酸、还原型谷胱甘肽含量(P<0.05),可降低背最长肌中苏氨酸、谷氨酸、丙氨酸、亮氨酸、γ-亚麻酸及二十碳三烯酸含量(P<0.05);与对照组相比,添加2.5 g/kg复合营养素可提高羔羊末重、平均日增重、宰前活重、胴体重及背最长肌中粗脂肪、棕榈油酸、十七碳烯酸、油酸及单不饱和脂肪酸含量(P<0.05),可降低背最长肌剪切力及亚油酸含量(P<0.05);添加5 g/kg复合营养素可提高羔羊背最长肌失水率及饱和脂肪酸含量(P<0.05),可显著降低不饱和脂肪酸/饱和脂肪酸(P<0.05)。由此可见,饲粮中添加2.5 g/kg复合营养素可提高羊屠宰性能、改善其肉品质,且效果优于5 g/kg复合营养素组。This experiment was conducted to investigate the effects of compound nutrients(including fermented bran polysaccharide, eugenol, cinnamaldehyde and capsicum oleoresin) on growth performance, slaughter performance, meat quality and antioxidant indexes in longissimus dorsi muscle of lambs. Thirty six healthy female Dorper×Thin-Tailed Han crossbred lambs with similar body weight were selected and randomly divided into three groups with six repetitions in each group and two sheep in each repetition. The control group was fed with a basic diet without compound nutrients, and the test groups(groups I and II) was supplemented with 2.5 and 5 g/kg compound nutrients in the basal diet, respectively. The trial period was 74 d, of which the pre-trial period was 14 d and the trial period was 60 d. The results showed as follows:Compared with the control group, the addition of 2.5 and 5 g/kg of compound nutrients to the diet increased the dry matter intake of lambs, increased the contents of aspartic acid, glycine, valine, isoleucine, tyrosine, phenylalanine, myristic acid,pentadecanoic acid, and glutathione in longissimus dorsi muscle(P<0.05), and significantly decreased the contents of threonine, glutamic acid, alanine, leucine, gamma-linolenic acid and carbonium in longissimus dorsi muscle(P<0.05). Adding 2.5g/kg of compound nutrients to the diet significantly increased the final weight, average daily gain, pre-slaughter live weight and hot carcass weight of lambs, increase the contents of ether extract, palmitoleic acid, heptadecenoic acid, oleic acid and monounsaturated fatty acid in longissimus dorsi muscle(P<0.05), and significantly decreased the shear force and linoleic acid contents in longissimus dorsi muscle(P<0.05). The addition of 5 g/kg of compound nutrients to the diet increased the water loss rate and the content of saturated fatty acid in longissimus dorsi muscle(P<0.05), and decreased the UFA/SFA ratio(P<0.05).In conclusion, the dietary supplementation of 2.5 g/kg compound nutrients significantly improved the
