摘 要:为了评价瓯江口刀鲚、凤鲚的营养品质,对刀鲚和凤鲚肌肉的营养成分进行测定。结果显示,刀鲚肌肉中的粗蛋白含量(16.99%)显著高于凤鲚(15.88%)(P<0.05),灰分和粗脂肪显著低于凤鲚(P<0.05)。刀鲚和凤鲚氨基酸组成基本一致,均含有18种氨基酸,总量分别占鱼肉鲜样的16.92%和15.31%,其中7种EAA(Leu、Ile、Phe、Tyr、Thr、Val、Lys)、2种HEAA(Arg、His)和6种NEAA(Asp、Glu、Ala、Cys-s、Ser、Tyr)的含量在2种鱼肌肉间均存在显著性差异(P<0.05)。氨基酸总量、鲜味氨基酸总量、EAA/TAA、EAA/NEAA存在显著性差异(P<0.05)。刀鲚和凤鲚肌肉中检测出脂肪酸种类相同,均有29种脂肪酸,其中饱和脂肪酸9种,8种单不饱和脂肪酸和12种多不饱和脂肪酸。2种鱼肌肉脂肪酸含量关系均为∑SFA>∑MUFA>∑PUFA。刀鲚中饱和脂肪酸含量除C21:0外均显著低于凤鲚,多不饱和脂肪酸含量除DPA外均显著低于凤鲚。刀鲚肌肉中二十碳五烯酸和二十二碳六烯酸(EPA+DHA)含量为7.26%低于凤鲚的9.00%。结果表明,刀鲚和凤鲚肌肉营养丰富,二者均为理想蛋白源,不饱和脂肪酸种类多样且含量丰富,二者均具有较高的营养价值。In order to evaluate the nutritional quality of Oujiang River Coilia nasus and C.mystus,the nutritional composition of 5 and 6 muscles was determined.The results showed that crude protein content in muscle of C.nasus was significantly higher than that of C.mystus(P<0.05),while ash and crude fat content were significantly lower than that of C.mystus(P<0.05).The amino acid composition of C.nasus and C.mystus was basically the same,containing 18 kinds of amino acids,accounting for 16.92%and 15.31%of fresh fish samples,respectively.The contents of 7 species of EAA(Leu,Ile,Phe,Tyr,Thr,Val,Lys),2 species of HEAA(Arg,His)and 6 species of NEAA(Asp,Glu,Ala,CYS-S,Ser,Tyr)showed significant differences between the two species(P<0.05).There were significant differences in total amino acids,total umami amino acids,EAA/TAA and EAA/NEAA(P<0.05).The same 29 fatty acids were detected in both C.nasus and C.mystus muscles,including 9 fatty acid,8 monounsaturated fat and 12 unsaturated fat.The fatty acid contents in muscle of C.nasus and C.mystus were∑SFA>∑MUFA>∑PUFA.The saturated fatty acid content of C.nasus except C21:0 was significantly lower than that of C.mystus,and the polyunsaturated fatty acid content except DPA was significantly lower than that of C.mystus.The content of eicosapentaenoic acid and docosahexaenoic acid(EPA+DHA)in muscle of C.nasus was 7.26%,which was lower than that of C.mystus(9.00%).The results showed that the muscles of C.nasus and C.mystus were rich in nutrition,both were ideal protein sources,the unsaturated fat are diverse and abundant,both of which had high nutritional value.
