摘 要:针对住宅建筑厨房及特殊建筑备餐间环境问题,验证《被动式超低能耗绿色建筑技术导则》所规范补风系统对住宅厨房环境的优化效果,分析补风系统合理性;选取炒制烹饪方式,规范实验过程,测试补风系统启闭条件下住宅厨房热湿环境与污染物浓度。结果表明:开启补风系统可以削弱烹饪废热向室内的扩散,有效降低厨房温度与垂直温差,改善人员舒适性;及时阻挡烹饪过程产生的细颗粒物、CO与CO_(2)向厨房空间的扩散,提高油烟机捕集效率,有利于健康舒适厨房环境的营造,但其效果有限,需进一步优化设计。Aiming at the problem that the poor thermal environment and high pollutant concentration in the kitchen and special building pantry,the optimization effect of the air supply system stipulated by Technical Guidelines for Passive Ultra⁃low Energy Green Buildings on the kitchen environment was verified,and the rationality of the air supply system was analyzed.Frying,the cooking method,was selected,the experimental process was standardized,and thermal environment and pollutant concentration in the kitchen of a low⁃energy building were analyzed under the opening and closing conditions of the air supply system.The results show that opening the air supply system can prevent the diffusion of cooking waste heat to the kitchen,lower the kitchen temperature,reduce vertical temperature difference,and improve the thermal comfort.Opening the air supply system can prevent the diffusion of fine particles,CO,and CO_(2) produced by cooking,improve the capture efficiency of the range hood,and facilitate the creation of a healthy and comfortable kitchen environment.However,its effect is limited and the design needs to be further optimized.
