摘  要:车前草作为我国重要的中药资源备受关注,近年因车前草种子包含丰富的车前子壳多糖(阿拉伯木聚糖)备受食品工业关注。文章对整粒车前子、车前子种皮和车前子粉3种原料进行成分分析,其中车前子粉中阿拉伯木聚糖的含量最高,为(71.48±0.29)%。采用单因素优化研究方法,确定车前子壳多糖的最佳热水提取条件为:车前子粉为底物,提取时间为1.50 h,提取温度为50℃,底物浓度10 g/L,固液比为1:100时,车前子壳多糖的提取率最大,为(73.85±3.12)%。利用车前子壳多糖优异成膜性能制备高透明车前子壳多糖膜材料,采用紫外-可见分光光度计、傅立叶红外光谱仪和热重分析仪对车前子壳多糖膜的光学透性、主要官能团和热稳定性进行表征。结果表明,车前子壳多糖膜在可见光范围内的光透过率在85%以上,热稳定性能优良,可承受300℃的高温。该结果为车前草整株资源的综合开发和车前子壳多糖产业的高质量发展提供理论依据。As an important traditional medicine resource in China,plantain(Plantago asiatica L.)has attracted much attention.In recent years,because plantain seeds contain abundant plantain seed husk polysaccharide(arabinoxylan),it has been widely concerned by the food industry.In this research,three raw materials of whole plantain seed,plantain seed husk and plantain seed powder were firstly analyzed.The content of arabinoxylan in plantain seed powder was as high as(71.48±0.29)%.The single factor optimization method was used to determine the optimal hot water extraction conditions of polysaccharides from plantain seed husk:plantain seed powder as substrate,extraction time 1.50 h,extraction temperature 50℃,substrate concentration 10 g/L,solid liquid ratio 1:100,at this time,the highest extraction rate of polysaccharides from plantain seed husk was(73.85±3.12)%.In addition,the excellent film-forming properties of plantain seed husk polysaccharide were used to prepare high-transparency plantain seed husk polysaccharide membrane,and the optical transmission of plantain seed husk polysaccharide membrane was determined by UV-Vis spectrometer,FT-IR spectrometer and thermogravimetric analyzer to characterize the optical performance,functional groups and thermal stability.The result shows that the light transmittance of the plantain seed husk polysaccharide membrane in the visible light range is over 85%,and the thermal stability is excellent,and it can withstand high temperature of 300℃.Therefore,the development of this subject is to provide a theoretical basis for the development of the whole plant resources of plantain and the high-quality development of the plantain seed husk polysaccharide industry.
