摘  要:目的:研究枇杷蜂蜜成熟过程中稳定碳同位素比值变化规律。方法:采用元素分析-同位素质谱法对采集的成熟过程中枇杷蜂蜜样品进行测定。结果:枇杷蜂蜜δ(13)^C值随着酿造时间的推移,由-20.71‰降低至-25.16‰,最终可能趋于成熟枇杷蜜的-25.30‰左右;封盖时期A~E5个蜂箱δ(13)^C值的极差值Δδ(13)^C_((max-min)1)分别为:1.46‰、0.47‰、0.80‰、1.17‰、1.00‰,远大于成熟枇杷蜜多次测定结果的差值0.30‰,说明封盖时期枇杷蜜并没有完全成熟,还存在酿造后熟转化的过程。结论:通过研究证明枇杷蜂蜜δ(13)^C值是跟其成熟过程相关的。封盖枇杷蜜并没有完全成熟,还存在酿造后熟转化的过程。本研究为确定枇杷蜂蜜的正确采收期及鉴别成熟枇杷蜜提供了数据支撑。The δ(13)^C average value of loquat honey decreased from-20.71‰to-25.16‰during the aging time,and finally approached to-25.30‰of mature loquat honey.The δ(13)^C_((max-min)1) values of A-E beehives were 1.46‰,0.47‰,0.80‰,1.17‰and 1.00‰,which were much higher than the absolute difference value 0.30‰determined for mature loquat honey,indicating that sealed loquat honey was not fully mature and there was ripening process after brewing.The δ(13)^C values of loquat honey were correlated with its maturation process.The sealed loquat honey was not fully mature and there was a ripening process after brewing.This study provides data support for confirming the correct harvesting period of loquat honey and identifying the mature loquat honey.
