摘　　要：山药是薯蓣属的一种藤本植物。其块茎含有丰富的淀粉、蛋白质、氨基酸、皂苷、粘多糖等,还含有Fe、Zn、Cu、Ca等多种矿物质。山药作为一种药食两用的经济作物,具有潜在开发价值和市场应用价值。山药具有降血压血脂,抗肿瘤,抗炎,免疫调节等功效。山药多糖、山药蛋白、皂苷等在治疗慢性肾病、糖尿病、冠心病、动脉粥样硬化等具有良好的预防作用。本文将概述山药的主要活性成分及其药理作用机制,以期为山药的开发和利用提供参考。Chinese Yam(Dioscorea opposita Thunb.)is a vine of the genus Dioscorea.Its tubers are rich in starch,protein,amino acids,saponins,mucopolysaccharides,etc.,and also contain Fe,Zn,Cu,Ca and other minerals.As a medicinal and edible economic crop,Chinese yam has potential development value and market application value.Yam has the effects of lowering blood pressure and blood lipids,anti-tumor,anti-inflammatory,immune regulation,etc.Yam polysaccharides,yam protein and saponins have a good preventive effect in the treatment of chronic kidney disease,diabetes,coronary heart disease,atherosclerosis,etc.This article will outline the main active components of yam and its pharmacological mechanism,in order to provide a reference for the development and utilization of yam.
