摘  要:针对壳聚糖产量多、可再生和性能优良的性质,但因只溶于酸性溶液而应用范围受限的不足,综述壳聚糖的改性方法和亲水改性壳聚糖、疏水改性壳聚糖的应用,包括酰基化改性、羧基化改性、季铵化改性、羟基化改性和烷基化改性;根据改性壳聚糖的特点和性质,介绍亲水改性壳聚糖和疏水改性壳聚糖在食品添加和包装、药品包装、活性成分包载与释放、皮革涂饰和工业废水处理领域的应用研究和成果,指出壳聚糖作为一种重要的生物多糖,未来的研究重点是开拓壳聚糖基材料在医疗器械、药物包载与靶向传递、绿色包装材料的应用范围,积极配合国家碳达峰、碳中和战略。Aiming at the status of chitosan with high content,renewability,and excellent performance,however,it was only dissolved in acid solution,which limited its wide application,modifying methods of chitosan and application of hydrophilic modified chitosan as well as hydrophobic modified chitosan were reviewed,including acylation modification,carboxylation modification,quaternary ammonium modification,hydroxylation modification,and alkylation modification.Based on characteristics and properties of modified chitosan,application research and progress of hydrophilic-and hydrophobic-modified chitosan in the fields of food addition and packaging,drug packaging,active ingredient packaging and release,leather finishing,and industrial waste water treatment were introduced.As one of the most important biological polysaccharides,the future research emphasis for chitosan was pointed to be developing the application range of chitosan based materials in medical devices,drug packaging and targeted delivery,and green packaging materials,and actively cooperating with the development strategy of peak carbon dioxide emission and carbon neutrality.
