摘  要:以苹果切片为研究对象,模拟研究对流干燥过程中,苹果切片平均含水率的影响因素以及苹果切片内部温度、内部含水率的变化。干燥空气流速、进风相对湿度一定时,增大进风温度可有效提高干燥速率。进风温度、进风相对湿度一定时,增大干燥空气流速,对促进苹果切片平均含水率快速达到稳定的作用并不明显。进风温度、干燥空气流速一定时,减小进风相对湿度可有效提高干燥速率。在对流干燥过程中,苹果切片内部温度随时间延长逐渐升高直至稳定,表面温度先于内部达到稳定。干燥是由外向内逐渐缓慢进行的,模拟中苹果切片外表面与中心存在温差,而蒸发与温度密切相关,因此切片中心与切片外表面的含水率不同。Taking apple slices as the research object,the influencing factors of average moisture content of apple slices and the changes of internal temperature and internal moisture content of apple slices during convective drying are simulated.When the drying air flow rate and the relative humidity of the inlet air are constant,increasing the inlet air temperature can effectively improve the drying rate.When the inlet air temperature and the relative humidity of the inlet air are constant,increasing the drying air flow rate has little effect on promoting the rapid stabilization of the average moisture content of apple slices.When the inlet air temperature and the drying air flow rate are constant,reducing the relative humidity of the inlet air can effectively improve the drying rate.In the process of convection drying,the internal temperature of apple slices gradually increases with time until stable,and the surface temperature reaches stable before the internal temperature.Drying is carried out gradually and slowly from the outside to the inside.In the simulation,there is a temperature difference between the outer surface and the center of apple slices,while the evaporation is closely related to the temperature,so the moisture content of the slice center is different from that of the slice outer surface.
