摘  要:试验旨在研究不同比例藜麦秸秆对肉羊生长性能、血清指标、屠宰性能和肉品质的影响。选取体重30 kg左右的健康断奶湖羊公羔80只,随机分为4组,每组4个重复,每个重复5只羊。对照组羊饲喂基础日粮,试验Ⅰ组、试验Ⅱ组、试验Ⅲ组分别使用33.3%、66.6%、100%藜麦秸秆替代玉米秸秆。预试期14 d,正式试验期60 d。结果显示:试验Ⅱ组湖羊的末重及平均日增重显著高于其他组(P<0.05);与对照组相比,各试验组湖羊的料重比有降低趋势(P>0.05)。试验Ⅱ组湖羊的眼肌面积显著高于对照组(P<0.05),试验Ⅲ组湖羊的GR值显著低于对照组(P<0.05)。试验Ⅱ组羊肉的剪切力显著低于对照组(P<0.05),粗蛋白含量显著高于对照组(P<0.05)。研究表明,添加藜麦秸秆能够提高羊肉肌间脂肪的沉积,提高羊肉多汁性和嫩度,改善羊肉品质,使用66%藜麦秸秆替代玉米秸秆效果较好。The experiment was conducted to investigate the effect of different proportions of quinoa straw on growth performance,serum indexes,slaughter performance and meat quality of mutton sheep.A total of 80 healthy weaned Hu sheep lambs of about 30 kg were randomly divided into four groups,with four replicates in each group and five sheep in each replicate.Sheep in control group were fed with a basal diet,and 33.3%,66.6%and 100%quinoa straw were used instead of corn straw in groupⅠ,groupⅡand groupⅢ,respectively.The pre-test lasted for 14 d and the formal test lasted for 60 d.The results showed showed that the final weight and average daily gain of Hu sheep in groupⅡwere significantly higher than those in other groups(P<0.05).Compared with control group,the feed to gain ratio of Hu sheep in test groups had a decreasing trend(P>0.05).The eye muscle area of Hu sheep in groupⅡwas significantly higher than that in control group(P<0.05),and the GR value of Hu sheep in groupⅢwas significantly lower than that in control group(P<0.05).The shear force of mutton in groupⅡwas significantly lower than that in control group(P<0.05).The crude protein content of groupⅡwas significantly higher than that of control group(P<0.05).The experiment indicates that the addition of quinoa straw can increase the deposition of fat between mutton muscles,improve the juiciness and tenderness of mutton,improve the quality of mutton,and use of 66%quinoa straw is better.
