摘  要:研究旨在评价复合益生菌对巨菌草发酵饲料品质的影响。试验将植物乳杆菌、乳双歧杆菌和凝结芽孢杆菌按照1∶1∶1比例制成复合发酵菌液,复合益生菌发酵组将2 mL/kg菌液均匀喷洒在巨菌草中,对照组不添加益生菌进行发酵,每组5个重复。密封发酵45 d,测定两组巨菌草饲料的营养成分、感官评分和发酵品质。结果显示:与对照组相比,复合益生菌发酵组巨菌草发酵饲料气味评分、色泽评分、pH值评分和总评分显著提高(P<0.05)。与对照组相比,复合益生菌发酵组巨菌草发酵饲料中粗蛋白和可溶性碳水化合物含量显著提高(P<0.05),中性洗涤纤维和酸性洗涤纤维含量显著降低(P<0.05)。与对照组相比,复合益生菌发酵组巨菌草发酵饲料中乳酸、乙酸、丙酸、总氮含量显著提高(P<0.05),pH值、丁酸和氨氮含量以及氨氮/总氮显著降低(P<0.05)。研究表明,添加植物乳杆菌、乳双歧杆菌和凝结芽孢杆菌制成的复合益生菌有利于促进巨菌草饲料发酵,改善发酵饲料品质。The study was to evaluate the effect of compound probiotics on quality of fermented feed of giant fungus. In the experiment, Lactobacillus plantarum, Bifidobacterium lactobacillus and Bacillus coagulans were prepared into a composite fermentation liquid at a ratio of 1∶1∶1. In the composite probiotic fermentation group, 2 mL/kg bacterial solution was evenly sprayed into megalococcus, while the control group did not add probiotics for fermentation, with five replicates in each group. After 45 d of sealed fermentation, the nutritional composition, sensory score and fermentation quality of two groups of macrophyta feeds were determined. The results showed that compared with control group, the odor score, color score, pH score and total score of giant fungus fermented feed in compound probiotic fermentation group were significantly increased(P<0.05). Compared with control group, the content of crude protein and soluble carbohydrate was significantly increased(P<0.05), while the content of neutral detergent fiber and acid detergent fiber were significantly decreased(P<0.05) in compound probiotic fermentation group. Compared with control group, the content of lactic acid,acetic acid, propionic acid and total nitrogen of giant fungus fermented feed in complex probiotic fermentation group was significantly increased(P<0.05), while pH value, the content of butyric acid and ammonia nitrogen and ammonia nitrogen/total nitrogen was significantly decreased(P<0.05). The experiment indicates that adding Lactobacillus plantarum,Bifidobacterium lactobacillus and Bacillus coagulans to make compound probiotics is beneficial to promote the fermentation of macrobiotic feed and improve the quality of fermented feed.
