摘　　要：虹鳟是目前原良种覆盖率最高的水产养殖品种,本文从分类学地位、养殖技术和加工技术等方面,分析了三文鳟产业发展的方向,为从业者提供借鉴。Salmon trout is the first product successfully researched and developed under the "salmon" standard in foreign advanced countries such as Denmark and Norway, that is, rainbow trout with orange meat. Rainbow trout is the aquaculture variety with the highest coverage of original improved varieties. This paper briefly analyzes the development direction of Sanwen trout industry from the aspects of taxonomic status, biological characteristics and processing technology, so as to provide reference for practitioners.
