摘　　要：目的了解河北省餐饮具集中消毒服务卫生现况。方法采取普查的方式,按照《餐饮具集中消毒服务单位卫生监督工作规范》进行现场检查,依据GB 14934—2016《食品安全国家标准消毒餐(饮)具》对消毒餐饮具进行抽检。结果河北省56.79%餐饮具集中消毒服务单位在农村,86.17%持有营业执照。持营业执照单位生产区面积500 m^(2)及以下占39.20%,1000 m^(2)及以下占64.51%;日产量1000套及以下占19.75%,5000套以下占69.44%;51.46%符合规范要求;95.06%落实健康体检,58.95%落实产品批次检验;餐具饮具抽检合格率97.05%。无营业执照单位移送率84.62%,不符合规范要求单位向市场监管部门通报率50.74%;媒体公示率37.5%,违法单位处罚率18.11%。结论河北省餐饮具集中消毒服务单位无执照生产仍然存在,不符合规范要求和违法单位比例还较高。Objective To investigate the current hygienic situation of centralized disinfection service units of tableware and drinking utensils in Hebei province.Methods The field inspection and sampling inspection were carried out by general survey.Results In Hebei province 56.79%of centralized tableware disinfection service units were in rural areas and 86.17%had business licenses.The production area of the licensed units with 500 m^(2)or less accounts for 39.20%,and 1000 m^(2)or less accounts for 64.51%;The daily output of 1000 sets and less accounted for 19.75%,less than 5000 sets accounted for 69.44%;51.46%meet the requirements of the specification;95.06%carry out physical examination,58.95%carry out product batch inspection;Tableware and drinking utensils sampling inspection rate 97.05%.The transfer rate of units without business license is 84.62%,and the reporting rate of units that do not meet the standard requirements to the market supervision department is 50.74%;The media publicity rate is 37.5%,and the punishment rate of illegal units is 18.11%.Conclusion The unlicensed production of tableware and drinkware centralized disinfection service units still exists in Hebei province,the proportion of non-conforming units and illegal units is still high.
