摘 要:目的:建立测定奶茶中总糖含量的方法,为奶茶总糖含量检测的标准制定提供参考;同时应用该方法测定分析宁德市区热销奶茶的总糖含量情况。方法:样品经过沉淀、过滤及水解等前处理后制备成试样水解液,再使用亚铁氰化钾滴定法测定奶茶样品中的总糖含量;购买宁德学校附近及市区各大畅销奶茶店铺不同甜度规格的奶茶样品,进行总糖含量的检测和分析。结果:该方法精密度、重复性良好,相对标准偏差值均小于0.2%;加标回收率在95.2%~102.1%之间,符合食品理化检验要求;平均一杯5分糖、7分糖及全糖甜度的奶茶的糖分摄入量均会超过《中国居民膳食指南》中建议的每日糖摄入量25g。结论:该实验方法准确、可靠、重现性良好,适用于市面上各种含糖量的奶茶样品检测;奶茶含糖量较高,应适度饮用,控制好每天的糖分摄入。Objective:To establish a method for the determination of total sugar content in milk tea,so as to provide reference for the formulation of the standard for the detection of total sugar content in milk tea.At the same time,the method was applied to determine and analyze the total sugar content of hot-selling milk tea in Ningde urban area.Methods:The sample was prepared into hydrolyzate after precipitation,filtration and hydrolysis,and then the total sugar content in the milk tea was determined by potassium ferrocyanide titration method.Purchase milk tea samples of different sweetness specifications from the best-selling milk tea shops near School and in the urban area in Ningde to detect and analyze the total sugar content.Results:The method has good precision and repeatability,and the relative standard deviation was less than 0.2%;the recoveries were 95.2%~102.1%,which met the requirements of food physical and chemical inspection.The sugar intake of a average cup of milk tea with 5% sugar,7% sugar and full sugar sweetness would exceed the daily sugar intake of 25g recommended in the "Dietary Guidelines for Chinese Residents".Conclusion:The method is accurate,reliable and with good reproducibility,and is suitable for the detection of milk tea samples with various sugar contents in the market.Milk tea has a high sugar content,so it should be consumed in moderation and control the daily sugar intake.
