摘 要:试验旨在研究不同比例巨菌草发酵饲料对绵羊生长性能、屠宰性能、肉品质和血清生化指标的影响。选择40只平均体重(31.27±2.07)kg的3~4月龄绵公羊,随机分为4组,每组10个重复,每个重复1只羊。A组(对照组)羊饲喂基础日粮;B组、C组、D组在基础日粮中添加10%、20%和30%的巨菌草发酵饲料。预试期7 d,正式试验期90 d。结果显示:与对照组相比,D组绵羊末重、平均日增重和采食量均显著升高(P<0.05),C组绵羊的末重显著升高(P<0.05)。与对照组相比,C组、D组羊的宰前活重、胴体重、屠宰率和眼肌面积均显著升高(P<0.05)。与对照组相比,C组、D组羊肉的系水力、蒸煮损失率和剪切力均显著降低(P<0.05)。与对照组相比,D组羊的血清总蛋白(TP)、葡萄糖(GLU)、甘油三酯(TG)含量及谷丙转氨酶(ALT)、谷草转氨酶(AST)活性均显著升高(P<0.05),血清尿素氮(BUN)含量显著降低(P<0.05)。研究表明,在基础日粮中添加复合益生菌发酵的巨菌草饲料可在一定程度上提高绵羊生长性能、屠宰性能,改善肉品质,其中以30%比例添加效果较好。The experiment was to study the effect of different proportion of giant fungus fermented feed on growth performance,slaughter performance,meat quality and serum biochemical indexes of sheep.A total of 40 three to fourmonth-old sheep with an average weight of(31.27±2.07)kg were randomly divided into four groups,with ten replicates in each group and one sheep in each replicate.The sheep in group A(control group)were fed with basic diet.The sheep in group B,group C and group D were fed with basal diet supplentment with 10%,20%and 30%giant fungus fermented feed,respectively.The pre-test period was 7 d,and the formal test period was 90 d.The results showed that compared with control group,the final weight,average daily gain and feed intake of sheep in group D were significantly increased(P<0.05),while the final weight of sheep in group C was significantly increased(P<0.05).Compared with control group,the live weight,carcass weight,slaughter rate and eye muscle area of group C and group D were significantly increased(P<0.05).Compared with control group,water holding capacity,cooking loss rate and shear force in group C and group D were significantly reduced(P<0.05).Compared with control group,the content of serum TP,GLU,TG and the activity of ALT and AST in group D were significantly increased(P<0.05),while the content of serum BUN were significantly decreased(P<0.05).The study indicates that the growth performance,slaughter performance and meat quality of sheep can be improved to some extent by adding the giant fungus grass feed fermented by compound probiotics to basic diet,it is better to add 30%.
