摘　　要：槲皮素是一种广泛存在于自然界的生物活性物质,具有抗氧化应激、抑菌消炎、抗病毒、提高免疫力及抗癌等多种药理作用。槲皮素可促进动物生长,提高动物免疫功能和抗氧化能力,改善畜产品品质,提高养殖效益。文章论述槲皮素的生物学功能,总结槲皮素在动物生产中的应用及其对养殖经济效益的影响,以期为槲皮素在无抗养殖中的开发利用提供参考。Quercetin is a kind of bioactive substance widely existing in nature.It has many pharmacological effects,such as anti-oxidation stress,bacteriostasis and anti-inflammatory,anti-virus,improving immunity and anti-cancer.Quercetin can promote animal growth,improve animal immune function and antioxidant capacity,improve the quality of livestock products,and improve the breeding efficiency.The paper discusses the biological function of quercetin,summarizes the application of quercetin in animal production and its impact on economic benefits of aquaculture,to provide a reference for the development and utilization of quercetin in non resistant aquaculture.
