摘 要:鸡蛋因其丰富的营养成为最受人们欢迎的日常食物之一,蛋白和脂质是其主要的营养成分。近年来,随着社会需求呈高层次化的发展趋势,人们在追求食品营养价值的同时,也十分关注食品的健康功能。因此,酶解技术制备的鸡蛋蛋白肽等鸡蛋深加工产品备受人们关注。卵黄提取磷脂后产生的副产物含有丰富的蛋白资源,但其利用率与附加值不高。很多研究证明卵黄肽具有抗氧化、降血压、骨保护等多种生物活性,在健康领域具有广泛的应用前景。本文对卵黄肽的制备方法、生物活性以及产业化应用进行概述,旨在为卵黄肽的进一步开发与应用提供有益的参考。Eggs are one of the most widely consumed foods because of their most nutrition,mainly including protein and lipid.In recent years,social demand has shown a high-level development trend.People also pay attention to the health properties of food beside the nutritional value.Therefore,the deep-processed products of eggs have attracted much attention,including egg protein peptides prepared by enzymatic hydrolysis.The by-products produced by the extraction of phospholipids from egg yolks are rich in protein,which is underutilizedand with a low added value.Emerging studies have proved that egg yolk protein peptide has various biological activities such as antioxidation,lowering blood pressure,bone protection with broad application prospects in the field of health care.This article summarizes preparation methods,biological activities and industrial applications of egg yolk protein peptide to provide a useful reference for the further development and application of egg yolk peptide.
