摘  要:实验基于HPLC技术,对现有检测TBBQ的样品前处理方法进行优化,同时研究市售典型含油脂食品中TBBQ的含量分布情况。结果显示,在已测的118个样品中,TBBQ含量从低于定量限到(23.59±0.73)mg/kg之间,含量超过1.0、5.0、15.0 mg/kg的样品数分别占总样品数的53.39%、15.25%和3.39%。不同类型食品TBBQ的平均含量分布在(1.12±0.49)mg/kg至(4.16±4.99)mg/kg之间,整体趋势:膨化食品>油炸面制品>熟制坚果>腌制肉类>食用油>烘焙食品。进一步分析发现,不同食品中TBBQ的含量和初始TBHQ的添加量及食品加工工艺有关。总体来看,TBBQ在市售含油脂食品中分布广泛,因TBBQ有潜在的生物毒性,将TBBQ列为风险评估因子对解决含油脂食品的安全问题是非常必要的。Based on HPLC technology, the existing sample pretreatment methods for the detection of TBBQ was optimized in the present experiment, and the concentration distribution of TBBQ in typical fatty foods on the market was studied. The results showed that among the 118 samples tested, the content of TBBQ ranged from below the quantitative limit to(23.59±0.73)mg/kg, and the samples with content more than 1.0,5.0,15.0 mg/kg accounted for 53.39%, 15.25% and 3.39% of the total samples, respectively. The average content of TBBQ in different types of food ranged from(1.12±0.49) to(4.16±4.99)mg/kg. The overall trend was as follows: expanded food>fried flour products>cooked nuts>pickled meat>edible oil>baked food. Further analysis showed that the content of TBBQ in different foods was related to the addition of initial TBHQ and food processing technology. On the whole, TBBQ was widely distributed in commercial greasy foods. Because TBBQ had potential biological toxicity, it was very necessary to list TBBQ as a risk assessment factor to solve the safety problem of greasy foods.
