摘  要:以栽培型马齿苋为试材,分析了马齿苋在不同生长阶段的多酚、总黄酮、类胡萝卜素、多糖、叶绿素等主要功能成分含量,采用DPPH、ABTS、Xan-XOD系统、酪氨酸-二酪氨酸系统(Tyrosine/di-Tyrosine)4种抗氧化方法进行马齿苋不同生长期抗氧化活性试验,并对其相关性进行分析。结果表明,栽培型马齿苋功能成分含量和抗氧化活性在不同生长期有差异。除多糖外的其他几种功能成分含量在苗期和营养生长期含量高,之后随着马齿苋生长而降低。抗氧化试验结果显示,马齿苋苗期抗氧化活性最高,随着生长期增加而降低,成熟期最低。多酚和总黄酮含量与抗氧化活性相关性最高。4种方法的抗氧化活性之间呈显著正相关。试验结果为栽培型马齿苋的开发应用提供参考。Total phenolic compounds,flavonoids,carotenoids,polysaccharide and chlorophyll of cultivated purslane were analyzed at different growing stages,as well as the antioxidant capacity were investigated by four different methods.The four methods include DPPH method,Xanthine-Xanthine oxidase(Xan-XOD)system,Tyrosin/Dityrosin method and ABTS method,and their correlation were analyzed.The results showed that the content of functional components exclude polysaccharide were higher at the seedling and vegetative periods.And then reduced by the growing of purslane.The purslane showed the highest antioxidant capacity at seedling period,and the lowest at harvest period.The highest correlations were showed between antioxidant capacity and phenolic compounds,antioxidant capacity and flavonoids.The significant positive correlations were showed among four antioxidant capacities.These results could be reference for the development and application of the cultivated purslane in the future.
