摘  要:目的 了解慈溪市水产品虾潺的甲醛含量,并进行食品安全暴露评估。方法 采用2,4-二硝基苯肼柱前衍生高效液相色谱法,对2020年-2021年慈溪沿海抽取的194份虾潺样本进行甲醛定量分析,并根据2016年浙江省居民食物消费状况调查中的膳食消费量进行甲醛膳食暴露评估。结果 虾潺均检出甲醛,平均值为79.2 mg/kg,含量在1.5 mg/kg~254 mg/kg,甲醛含量差异有统计学意义(P<0.05);甲醛急性膳食暴露[1.24 mg/(kg BW·d)]和慢性膳食暴露[0.039 mg/(kg BW·d)]均低于相关标准。结论 慈溪沿海地区虾潺中均检出高水平甲醛,与国内其他海域的检测水平一致。虾潺的冷藏保鲜期较长,但冷冻后甲醛含量升高,不建议食用;暴露评估表明,未经冷冻虾潺中甲醛的暴露量是可接受的。Objective This paper aims to understand the contents of formaldehyde in Harpadon nehereus in Cixi City and conduct a food safety exposure assessment. Methods A total of 194 Harpadon nehereus samples were collected from the coast of Cixi during 2020 to 2021 and the formaldehyde contents in them were determined by 2,4-dinitrophenylhydrazine precolumn derivatization-high performance liquid chromatography, and then the formaldehyde dietary exposure risk was assessed by the corresponding food consumption data in the investigation of residents’ food consumption in Zhejiang Province in 2016. Results Formaldehyde was detected in all of the Harpadon nehereus samples, with an average content of 79.2 mg/kg, ranging from 1.5 mg/kg to 254 mg/kg. The difference of formaldehyde content was statistically significant(P<0.05). Acute dietary exposure risk assessment [1.24 mg/(kg BW·d)] and chronic dietary exposure risk assessment [0.039mg/(kg BW·d)] were both lower than the relative criterion. Conclusion High levels of formaldehyde were detected in Harpadon nehereus from Cixi coastal area, which was consistent with the levels in other domestic sea areas. The cold storage period of Harpadon nehereus is usually long. Because the formaldehyde contents in Harpadon nehereus increase with the storage time, it is not recommended for consumption. The exposure assessment showed that the exposure to formaldehyde in fresh Harpadon nehereus was acceptable.
