摘　　要：随着消费者对A2β-酪蛋白的关注度提升,A2β-酪蛋白相关产品不断更新换代。A2β-酪蛋白常用检测方法有反相高效液相色谱法(RP-HPLC)、液相色谱-高分辨串联质谱法、毛细管区带电泳法、试剂盒检测法等。本文对β-酪蛋白遗传变体A1β-酪蛋白和原始形态A2β-酪蛋白的功能特点、检测方法、定量分析进行综述,说明检测方法的原理和试剂药品的作用机理,加强对A1β-酪蛋白、A2β-酪蛋白检测方法的改进与优化,为A2β-酪蛋白应用于功能性食品、婴幼儿配方食品提供理论依据。With consumers'concern for increased attention to A2β-casein,A2β-Casein related products are also constantly updated,Common detection methods for A2β-casein include,reversed phase high performance liquid chromatography(RP-HPLC),liquid chromatography high resolution tandem mass spectrometry,capillary zone electrophoresisrapid kit detection,etc..This paper reviewed the functional characteristics,detection methods and quantitative analysis ofβ-Casein genetic variant A1β-Casein and A2β-casein in original form.The purpose is to explain the principle of detection method and the action mechanism of reagents and drugs,strengthen the improvement and optimization of A1β-Casein and A2β-casein detection method.It provided theoretical basis for the application of A2β-casein in functional food,including milk base material and infant formula food.
