摘  要:本文在单因素试验的基础上,通过设计正交实验优化葡萄籽中原花青素超声提取工艺条件,并研究了原花青素的抗氧化活性。结果表明:最佳工艺条件为乙醇浓度70%,液料比1∶25,超声时间20 min,提取2次,在此条件下原花青素的提取率为4.96%。所得原花青素提取物对ABTS、DPPH、羟基自由基都具有一定的清除率,IC_(50)值分别是0.390、0.242、0.256μg/mL。Based on the single factor experiment,this paper optimized the ultrasonic extraction process conditions of proanthocyanidins from grape seeds by designing orthogonal experiments,and studied the antioxidant activity of proanthocyanidins.The results showed that the best process conditions were ethanol concentration of 70%,liquid-to-material ratio of 1∶25,ultrasonic time of 20 min,and two extractions.Under these conditions,the extraction rate of proanthocyanidins was 4.96%.The obtained proanthocyanidin extract has a certain scavenging rate for ABTS,DPPH,and hydroxyl radicals,and the IC_(50) values are 0.390,0.242,and 0.256μg/mL,respectively.
