摘 要:为解决生姜机械化收获损伤率高等问题,探讨了生姜的物理及力学特性。通过试验,测定了收获期生姜含水率为89%~93%,且中部最高、上部次之、下部最低。通过弯曲试验,确定子姜从母姜断裂时的抗弯强度为(1.067±0.033)MPa。借助Design-Expert 12软件,确定了生姜取样位置、取样角度对抗压强度显著,取样位置对抗剪强度显著。通过测定生姜抗压强度试验及抗剪强度,结果表明:生姜上部抗压强度平均值为0.77MPa,弹性模量平均值为2.74MPa,剪切强度平均值为0.47MPa;生姜中部抗压强度平均值为0.82MPa,弹性模量平均值为3.01MPa,剪切强度平均值为0.53MPa;生姜下部抗压强度平均值为0.74MPa,弹性模量平均值为2.95MPa,剪切强度平均值为0.46MPa。由此可见,在收获、运输等环节应尽量避免对生姜子姜上部、下部施加较大力,降低生姜损失。In order to solve the problem of high damage rate of ginger mechanized harvest,the physical and mechanical properties of ginger were studied.The moisture content of ginger during harvest was 89%-93%,and the middle was the highest,the upper was the second,and the lower was the lowest.Through bending test,it is determined that the bending strength of Zijiang when it breaks from ginger mother is(1.067±0.033)MPa.With the help of design expert 12 software,it is determined that the sampling position and sampling angle of ginger have significant effects on the compressive strength and the shear strength.By measuring the compressive strength test and shear strength of ginger,it is determined that the average compressive strength of the upper part of ginger is 0.77MPa,the average elastic modulus is 2.74MPa and the average shear strength is 0.47MPa;The average compressive strength in the middle of ginger is 0.82MPa,the average elastic modulus is 3.01MPa,and the average shear strength is 0.53MPa;The average compressive strength of the lower part of ginger is 0.74MPa,the average elastic modulus is 2.95MPa,and the average shear strength is 0.46MPa.It can be seen that in the harvest,transportation and other links,we should try to avoid exerting more force on the upper and lower parts of ginger to reduce the loss of ginger.
