摘 要:目的采用单因素试验、响应曲面法优选绿丝郁金产地趁鲜加工工艺。方法以切片前烘制温度、切片前烘制时间、切片方式、切片厚度、切片干燥温度为考察因素,以外观性状和内在质量为考察指标,在单因素试验的基础上,用Box-Behnken响应面试验设计优化绿丝郁金的产地趁鲜加工工艺。结果筛选得到的绿丝郁金产地趁鲜加工最佳工艺为:将净制绿丝郁金鲜品蒸制15min,取出晾冷,切片前烘制温度45℃,切片前烘制时间5h,切片方式横切,切片厚度5mm,切片干燥温度65℃。结论优选的趁鲜加工工艺与传统饮片加工相比具有明显的优越性,其浸出物、挥发油、吉马酮含量分别提高了7.64%、50%、60%,且生产效能和环境兼容性等更强,可用于绿丝郁金产地趁鲜加工。Objective Optimization of fresh processing technology of root tuber of Curcuma phaeocaulis Val.in producing area by single factor experiment and response surface method.Methods The drying temperature before slicing,the drying time before sli-cing,the slicing method,the slicing thickness and the drying temperature of slicing are taken as the investigation factors,and the appearance properties and internal quality are taken as the investigation indexes.On the basis of single factor test,box Behnken response surface test design was used to optimize the fresh processing technology of root tuber of Curcuma phaeocaulis Val.Re-sults The best processing technology of root tuber of Curcuma phaeocaulis Val.in fresh place is as follows:baking temperature before slicing is 45℃,baking time before slicing is 5h,slicing mode is cross cutting,slicing thickness is 5mm,and slicing drying temperature is 65℃.Conclusion Compared with the traditional processing,the optimized fresh processing technology has obvious advantages.The contents of extract,volatile oil and gemmatone are increased by 7.64%,50%and 60%respectively,and the production efficiency and environmental compatibility are stronger.It can be used for fresh processing in root tuber of Curcuma phaeocaulis Val.producing area.
