摘 要:文章旨在研究日粮中添加不同剂量的酵母培养物对育肥牛生长性能及肉品质的影响。试验选取育肥期西门塔尔杂交肉牛72头,随机分为3组,每组6个重复,每个重复4头牛。对照组饲喂基础日粮,2个试验组分别在基础日粮中添加100和200 g酵母培养物。试验为期120 d,分为1~90 d和91~120 d两个阶段。结果表明:与对照组相比,日粮中添加200 g酵母培养物显著提高了育肥牛试验期末体重、平均日增重和平均日采食量,显著降低了育肥牛试验期料重比(P<0.05);日粮中添加200 g酵母培养物显著提高育肥牛背最长肌大理石纹评分(P<0.05);日粮中添加100和200 g酵母培养物显著降低育肥牛肉色黄度值和滴水损失(P<0.05);添加200 g酵母培养物可显著降低育肥牛肌肉蒸煮损失(P<0.05)。综上所述,酵母培养物在育肥牛养殖中的应用可以有效提高育肥牛生长性能,提高育肥牛肌肉大理石纹评分,改善肉色,降低肌肉滴水损失和蒸煮损失。酵母培养物在育肥牛养殖中的推荐剂量为200 g/d。The aim of this experiment was to investigate the effects of different doses of yeast culture added to diet on growth performance and meat quality of fattening cattle.A total of 72 finishing Simmental crossbred beef cattle were randomly divided into 3 groups of 6 replicates each with 4 cattle in each replicate.The control group was fed the basal diet,and the two experimental groups were fed 100and 200 g of yeast culture per day in the basal diet,respectively.The trial period was 120 d,divided into two phases,1~90 d and 91~120 d.The results showed that the addition of 200 g of yeast culture to the ration significantly increased body weight,average daily weight gain and average daily feed intake at the end of the trial period and significantly reduced the feed-to-weight ratio of finishing cattle compared with the control group(P<0.05);the addition of 200 g of yeast culture to the diet significantly improved the marbling score of the longissimus dorsi of finishing cattle(P<0.05);the addition of 100 g and 200 g of yeast culture to the diet significantly reduced the color yellowing value and drip loss of finishing cattle(P<0.05);the addition of 200 g of yeast culture significantly reduced the cooking loss of finishing cattle muscle(P<0.05).In conclusion,the application of yeast culture in fattening cattle rearing can effectively improve the growth performance of fattening cattle,increase the marbling score of fattening cattle muscle,improve the meat color,and reduce the drip loss and cooking loss of muscle.The recommended dose of yeast culture in fattening cattle rearing is 200 g/d.
