发酵玉米秸秆对育肥牛生长性能、屠宰性能、肉品质和免疫指标的影响

摘　　要：试验旨在研究发酵玉米秸秆对育肥牛生长性能、屠宰性能、肉品质和免疫指标的影响。选取45头西门塔尔育肥公牛,随机分成3组,每组3个重复,每个重复5头牛。对照组(C组)育肥牛饲喂基础日粮,T1组、T2组分别饲喂含50%和100%发酵玉米秸秆的基础日粮。试验期120 d。结果显示,与C组相比,T2组育肥牛的平均日增重、背膘厚度、pH_(45 min)值、pH_(24 h)值、总抗氧化能力(T-AOC)、超氧化歧化酶(SOD)活性、谷胱甘肽过氧化物酶(GSH-Px)活性、免疫球蛋白A(IgA)含量、免疫球蛋白G(IgG)含量、白细胞介素-2(IL-2)含量、干扰素-γ(IFN-γ)含量均显著升高(P<0.05),料重比、剪切力、滴水损失率、蒸煮损失率、丙二醛(MDA)含量均显著降低(P<0.05)。与C组相比,T1组育肥牛滴水损失率、蒸煮损失率均显著降低(P<0.05),SOD活性、GSH-Px活性、IgG含量均显著升高(P<0.05)。研究表明,发酵玉米秸秆完全替代基础日粮中玉米秸秆能够显著改善育肥牛的生长性能、肉品质、抗氧化和免疫指标。The experiment was to study the effect of fermented corn straw on growth performance,slaughter performance,meat quality and immune indexes of cattle.A total of 45 Simmental finishing bulls were randomly divided into three groups,with three replicates in each group,and five cattle in each repliacte.The finishing cattle in control group(group C)were fed with basic diet,and cattle in group T1 and group T2 were fed with fermented diet containing 50%and 100%fermented corn straw,respectively.The experimental period was 120 d.The results showed that compared with group C,average daily gain,backfat thickness,pH_(45 min),pH_(24 h),T-AOC,SOD activity,GSH-Px activity,IgA content,IgG content,IL-2 content and IFN-content were significantly increased of finishing cattle in T2 group(P<0.05).The feed to gain ratio,shear force,drip loss rate,cooking loss rate and MDA content were significantly decreased of finishing cattle in T2 group(P<0.05).Compared with group C,drip loss rate and cooking loss rate of finishing cattle in group T1 were significantly decreased(P<0.05),while SOD activity,GSH-Px activity and IgG content were significantly increased(P<0.05).The experiment indicates that the fermented corn straw prepared by completely replacing corn straw in basic diet can significantly improve growth performance,meat quality,antioxidant and immune indexes of finishing cattle.
