摘  要:以牛奶、鸡蛋蛋清、白砂糖、胡萝卜、猴头菇菇浆为主要原料加工制作双皮奶,以感官评价分值为依据,通过单因素试验和正交试验确定出最佳配方。结果表明,最佳配方为牛奶用量100.00 g,胡萝卜用量14.00 g,白砂糖用量12.00 g,蛋清用量27.00 g,食用香精用量0.03 g,复配添加剂用量0.3 g,30%菇浆用量0.5 g。最终产品呈淡粉色,色泽均匀有光泽,口感细腻、嫩滑爽口,并且产品中含有胡萝卜和猴头菇的成分,保护肠胃综合性价值较高,具有良好的营养保健作用,市场潜力较大。This paper mainly studied the method of making double skin milk with milk,egg white,white sugar,carrot and Hericium erinaceus paste as the main raw materials.Based on the sensory evaluation score,the best formula was determined by single factor experiment and orthogonal experiment.The results showed that the best formula was milk 100.00 g,carrot 14.00 g,white sugar 12.00 g,egg white 27.00 g,edible essence 0.03 g,compound additive 0.3 g,30%Hericium erinaceus paste 0.5 g.The final product is light pink,uniform and shiny in color,delicate in taste,tender and smooth in mouth.Moreover,the product contained carrot and bear's head tooth mushroom,which had a high comprehensive value of gastrointestinal protection,good nutrition and health care effect,and had a great market potential.
