摘　　要：乳制品是现如今食品制造当中属于发展十分迅速的行业,在改革开放发展的期间,乳制品工业的行业发展模式、质量安全、技术设备等都发生明显转变。但乳制品工业在发展期间还存在一定的问题,乳制品在发展期间速度快,尤其是奶源管理、质量控制等方面。乳制品的质量检测成为实际发展的重要基础,需从多方面出发,如影响乳制品质量安全风险因素、乳制品行业的发展,只有对影响乳制品安全风险进行科学的管控,才可以更为促进乳制品行业迅速发展,进一步针对乳制品质量快速检测原理进行分析,乳制品检测水平的提高,是现今社会应该注重的问题。Dairy products are a rapidly growing industry in food manufacturing today,during the period of reform and opening up,the industry development model,quality and safety,technology and equipment of dairy industry have changed obviously.However,there are still some problems in the development of industry,especially in the management of milk source and quality control.The quality detection of dairy products has become an important basis for the actual development,so we need to set out from many aspects,such as the impact of dairy product quality and safety risk factors,the development of dairy industry,because only scientific control of dairy product safety risk can promote the rapid development of dairy industry,and further analyze the principle of rapid detection of dairy product quality.Therefore,the improvement of detection level of dairy products,is now the society should pay attention to the problem.
