摘  要:低温贮藏是延缓果蔬采后品质劣变的主要手段。该文通过综述低温延缓果蔬贮藏品质劣变的生理生化作用,总结果蔬低温贮藏糖代谢研究进展,阐明果蔬糖代谢的转录调控作用。此外,对低温延缓果蔬采后品质劣变与v-myb禽成髓细胞瘤病毒致癌基因同源物(v-myb avian myeloblastosis viral oncogene homolog,MYB)转录调控糖代谢的关系研究进展进行综述,以期揭示果蔬采后低温贮藏过程中糖代谢的可能转录调控机制,为果蔬贮藏保鲜和加工提供理论依据。Low temperature storage plays a vital role in maintaining the quality of postharvest fruits and vegetables.In this review,physiological and biochemical effects of low temperature storage on postharvest fruits and vegetables were summarized,and sugar metabolism and its transcriptional regulation in fruits and vegetables during low temperature storage were further elucidated.Moreover,the relationship between low temperature delaying postharvest quality deterioration of fruits and vegetables and v-myb avian myeloblastosis viral oncogene homolog(MYB)transcriptional regulation of sugar metabolism was reviewed,in order to reveal the possible transcriptional regulation mechanism of sugar metabolism in postharvest fruits and vegetables during low temperature storage,and provide a theoretical basis for the storage,preservation and processing of fruits and vegetables.
