大学城“中央厨房”联合运营模式创新与机制——兼论银川大学城区域餐饮集中化配送的可行性

摘　　要：中央厨房能够通过规模化采购、标准化生产加工以及集中化配送,实现降低餐饮成本、保障食品安全的目的。本文通过梳理高校餐饮经营现状和存在的问题,结合银川大学城区域餐饮需求,分析大学城“中央厨房”联合运营模式的特点和优势,以及建立该模式的可行性和必要性,并从供应链运营整合角度,分析大学城“中央厨房”联合运营模式中需求端、生产加工端、采购端以及供应端的功能和构成,构建大学城“中央厨房”高校餐饮联合运营模式,并提出联合运营的框架与运行保障机制。最后,给出研究结论并指出需要进一步研究关注的问题。The central kitchen can reduce catering costs and ensure food safety through large-scale procurement,unified and standardized production and processing,and centralized distribution.By combing the current situation and existing problems of catering operation modes in colleges and universities,combined with the regional catering demand situation of Yinchuan university town,this paper analyzes the characteristics and advantages of the joint operation mode of"Central Kitchen"in the university town,as well as analyzes the feasibility and necessity of establishing this model from the perspective of operation integration,and the functions and composition of the demand side,production and processing side,purchasing side and supply side in the joint operation mode of the"Central Kitchen"in the university town.Then,constructs the joint operation mode of the university catering in the"Central Kitchen"of the university town,and proposes the framework of joint operation and operation guarantee mechanism.Finally,gives the conclusions of the study and the issues that need further research attention.
