摘　　要：烟台是全国苹果生产第一大市,种植历史悠久,产量较高。近年来,随着苹果产业规模的不断扩大,烟台苹果深加工也得到了大力发展,产业链供应链韧性和竞争力实现质的飞跃,浓缩苹果汁的出口量和市场份额长期稳居世界首位。但在发展中,仍然面临产品结构单一、同质化严重、规模散弱等瓶颈问题。本文从苹果生产、精深加工、产品研发三个方面,深入分析了烟台苹果加工业的发展现状和存在的问题,提出了苹果加工业多元化发展思路和提升对策,旨在推动苹果产业转型升级,实现高质量发展。Yantai is the largest apple production city in China,with the longer planting history and the higher total yield.In recent years,with the continuous expansion of the apple industry,the deep processing of Yantai apples has also been vigorously developed.The resilience and competitiveness of the industrial chain supply chain have achieved a qualitative leap,and the export volume and market share of concentrated apple juice have consistently ranked first in the world.However,in development,there are still bottlenecks such as a single product structure,severe homogenization,and weak scale.This article analyzed the current development status and existing problems of Yantai’s apple processing industry from three aspects:apple production,deep processing,and product research and development.It proposed diversified development ideas and improvement strategies for the apple processing industry,aiming to promote the transformation and upgrading of the apple industry and achieve high-quality development.
