摘　　要：永春老醋是中国四大名醋之一,醋对人体健康起到重要作用。文章阐述了永春老醋产业的发展概况,运用了SWOT分析法,梳理了永春老醋产业发展所面临的优势、劣势、机遇和威胁,分析了相关结论,进而提出针对性的发展策略,主要包括加强培育龙头企业,制定行业标准;促进产学研融合发展,优化产业结构;培育老醋产业人才,做强主导品牌等方面;以期为福建老醋产业的高质量发展提供决策参考。Yongchun mature vinega is one of the four famous vinegar in China.Vinegar plays an important role in human health.This paper expounds the development situation of Yongchun mature vinegar industry uses the SWOT analysis to comb strengths,weaknesses,opportunities and threats feced by the development of Yongchun mature vinegar industry analyzes the relevant conclusions,and then puts forward targeted development strategies,mainly including strengthening the cultivation of leading enterprises,formulating industry standards;promoting the integration of industry university and research,optimizing the industrial structure;cultivating talents in the mature vinegar industry strengthening the leading brand and so on;it is expected to provide decision-making reference for the high-quality development of Fujian mature vinegar industry.
