畜产品中磺胺类药物残留危害及检测技术的研究进展

摘　　要：磺胺类药物(sulfonamides,SAs)是指一类具有对氨基苯磺酰胺结构的抗生素药物总称,在畜牧养殖业中常用于预防和治疗细菌和寄生虫感染类疾病。该药物价格低廉、药效明显,在各类畜禽的养殖过程中大量使用。但近年研究发现,该药物对人体具有严重的副作用,过量使用会导致其在畜产品中大量残留,人体摄入这种食品后会导致药物在人体中蓄积,从而诱发过敏反应、造成肾脏系统损伤、破坏造血功能、诱发癌症等不良反应,对人体健康造成较大危害。文章通过对磺胺类药物的结构及作用原理、残留的原因及危害、最大残留限量以及检测技术的原理及应用进行了综合概述,比较了不同检测技术优缺点。对推动畜牧养殖业健康发展和动物源性食品安全具有一定意义。Sulfonamides(SAs)are a class of antibiotic drugs with the structure of p-aminobenzenesulfon⁃amide,which are often used in livestock farming for the prevention and treatment of bacterial and parasit⁃ic infections.The drug is inexpensive and effective,and is used in large quantities in the breeding pro⁃cess of various types of livestock and poultry.However,recent studies have found that the drugs have se⁃rious side effects on humans,and excessive abuse can lead to large residues in livestock products,which can lead to the accumulation of drugs in the human body after ingestion of such foods,thus inducing al⁃lergic reactions,causing damage to the kidney system,damaging hematopoietic function,inducing can⁃cer,and causing greater harm to human well-being.This paper provides a comprehensive overview of the structure and principles of action of sulfonamides,the causes and hazards of residues,the maximum residue lines and the principles and applications of detection technologies,and compares the advantages and disadvantages of different detection technologies.It is of some significance to promote the healthy de⁃velopment of animal husbandry and animal-derived food safety.
