摘  要:作为一种可食用的绿色环保材料,胶原膜被广泛应用于食品包装,但较弱的机械性能限制了其进一步应用。论文探究了碳酰二亚胺在水相(AW-COL)、乙醇/水双相(AW/E-COL)和含苹果酸的乙醇/水双相中(AW/E-MA)对胶原膜的改性效果。结果表明,AW/E-COL和AW/E-MA改性后的胶原膜中形成较多酰胺键,膜的耐水性、耐酶解性、热稳定性、蒸煮性和力学性能明显提高。其中,AW/E-MA改性后,胶原膜干强度和湿强度分别从(92.90±5.21)MPa和(3.21±0.32)MPa提高到(163.36±10.55)MPa和(24.64±4.19)MPa。然而,AW-COL改性对胶原膜性能提升不明显,这可能是膜中酰胺键生成较少且结构受到一定破坏所致。研究表明,AW/E-MA改性后的胶原膜理化性质优异,是一种具有较大应用价值的食品包装材料。As an edible and green material,collagen film has been widely used in food packaging,but the weak mechanical properties limit its further application.This work investigated the modification of collagen films by carbodiimide hydrochloride in aqueous(AW-COL),ethanol/water biphasic(AW/E-COL)and the malic acid-containing ethanol/water biphasic(AW/E-MA)solutions,respectively.The results showed that more cross-linking bonds had been formed in the collagen films by the modification in AW/E-COL and AW/E-MA,leading to the improvement in their water resistance,enzymatic hydrolysis resistance,thermal stability,cooking performance and mechanical property.After the modification in AW/E-MA,the dry strength and wet strength of collagen film increased from(92.90±5.21)MPa and(3.21±0.32)MPa to(163.36±10.55)MPa and(24.64±4.19)MPa,respectively.However,the modification in AW-COL did not significantly improve the performance of collagen film,which may be caused by the less formation of cross-linking bonds in the film and some damage to its structure.The present collagen film modified in AW/E-MA had excellent physical and chemical properties,and is expected to have great potential application value as a food packing material.
