摘 要:烹饪会产生大量有害物质,其中颗粒物中的PAHs对人体的致癌性较大.为研究城市和农村烹饪环境下室内空气PAHs的污染特征及对健康的危害,本文分别对城市居民楼厨房和农宅厨房进行PM1.0浓度实时监测及PM1.0中PAHs浓度测量,并分析了上述两种烹饪环境空气中PAHs的致癌风险.研究表明,测试期间两种烹饪环境中室内空气PM1.0的平均浓度为:农宅厨房(503.62μg/m^(3))>城市居民楼厨房(94.98μg/m^(3)),两种烹饪环境均超出标准限值1.27至6.71倍;测试期间两种烹饪环境中PAHs的平均浓度为:农宅厨房(478.00 ng/m^(3))>城市居民楼厨房(81.03 ng/m^(3)),农宅厨房使用固体燃料进行烹饪和供暖,故其PAHs的平均浓度最大,这说明因烹饪燃料燃烧产生的PAHs对室内环境污染不容忽视;对以上两种烹饪环境中的PAHs进行健康风险评价结果为:两种烹饪环境均对成年男性和女性构成高潜在吸入致癌风险,PAHs对男性的吸入致癌风险高于女性.农宅厨房中PAHs对人体的吸入致癌风险最高.Cooking will produce a large number of harmful substances,of which PAHs in particulate matter are more carcinogenic to human body.In order to study the pollution characteristics and health hazards of PAHs in indoor air under urban and rural cooking environments,this study conducted real-time monitoring of PM1.0 concentration and measurement of PAHs concentration in PM1.0 in urban residential building kitchen and Farmhouse kitchen,and analyzed the carcinogenic risk of PAHs in the air of the above two cooking environments.The research shows that:The average concentration of indoor air PM1.0 in the two cooking environments during the test period was farmhouse kitchen(503.62μg/m^(3))>urban residential building kitchen(94.98μg/m^(3)),both cooking environments exceed the standard limit by 1.27 to 6.71 times;During the test,the average concentration of PAHs in the two cooking environments is farmhouse kitchen(478.00 ng/m^(3))>urban residential kitchen(81.03 ng/m^(3)).The farmhouse kitchen uses solid fuel for cooking and heating,so the average concentration of PAHs was the largest,which means that the PAHs generated by the combustion of cooking fuel can not be ignored in the indoor environment;The results of health risk assessment of PAHs in the above two cooking environments are as follows:both cooking environments posed a high potential risk of inhalation carcinogenesis for adult male and female,and the risk of inhalation carcinogenesis of PAHs for male was higher than that for female.The risk of carcinogenesis of PAHs in farmhouse kitchen was the highest.
