摘 要:硒是对人体有着重要生理功能的微量元素之一,人体可以通过食物、保健品或者硒营养强化剂来补充有机硒,其中,食补是最直接的方式。但我国2/3的土地缺硒,靠食物原料富集补硒还远远不够;目前市售的保健品和硒营养强化剂的种类和功能又相对比较单一,因此将硒与其他功能成分结合起来开发更有效的含硒活性物质作为补硒产品是一种较适宜的途径。当下,含硒活性物质的开发技术正处于蓬勃发展阶段,主要借助于生物、化学和物理三种手段,具体包括生物同化技术、转基因技术、酸催化技术、微胶囊技术、纳米技术和超声波辅助技术等,虽然这些技术暂时各有优缺点,但随着更深入的研究和实践,将会为开发更多种类和功能的硒保健品提供理论支撑和应用依据。Selenium is one of the trace elements with important physiological functions for the human body.The human body can supplement organic selenium through food,health products or selenium nutrient fortifier,among them,diet tonic is the most direct way.However two-thirds of the land is short of selenium in our country,and it is far from enough to rely on food raw material to enrich and supplement selenium.The types and functions of health care products and selenium supplements on the market are still relatively single.Therefore,it is a good idea to combine selenium with other functional components to develop new products.At present,the development technology of selenium-containing active substances is in the stage of vigorous development,mainly through biological,chemical and physical means,including biological assimilation technology,transgenic technology,acid catalysis technology,microcapsule technology,nanotechnology and ultrasonic assisted technology.These techniques provide a theoretical basis for developing more kinds and functions of selenium health products,although these technologies have their own advantages and disadvantages for the time being,with more in-depth research and practice,they will provide theoretical support and application basis for the development of more types and functions of selenium health products.
