摘 要:新疆伽师瓜具有肉厚质细、营养丰富、含糖量高等特点,由于成熟后易出现市场短期积压、霉变和腐烂等,造成大量的经济损失。因此,将其加工成伽师瓜果汁是提高商品价值有效的解决途径之一。采用单因素试验与正交试验对各因素影响澄清效果的程度加以明确,即酶解酸碱度>添加果胶酶(Pectase)的量>酶解时间>酶解温度,结果表明,诸影响因素中最主要的是酶解pH值;最优澄清工艺为酶解酸碱度4.0,Pectase添加量0.2 g/L,酶解时间60 min,酶解温度35℃。能够达到97.5%的澄清后果汁透光率,可溶性固形物含量(SSC)略有增多,果胶含量下降幅度为97.5%,蛋白质含量下降幅度为92%,维C、总酸与总糖水平未见明显波动,营养损失较少。Jiashi melon in Xinjiang has the characteristics of thick and fine flesh,rich nutrition,high sugar content,etc.It is easy to form a short-term market backlog,mildew and decay after maturity,resulting in a large number of economic losses.Therefore,processing it into Jiashi melon juice is one of the effective ways to improve the value of commodities.In this paper,single factor and orthogonal experiments were used to determine the influence order of each factor on the clarification effect as follows:pH value of enzymolysis>addition amount of pectinase>enzymolysis time>enzymolysis temperature.The results showed that:pH value of enzymolysis was the most important factor;The best clarification conditions were as follows:the addition of pectinase was 0.2 g/mL,the pH value of enzymatic hydrolysis was 4.0,the temperature of enzymatic hydrolysis was 35℃,and the time of enzymatic hydrolysis was 1h.After clarification,the light transmittance of fruit juice reached 97%,the content of soluble solids increased slightly,the content of pectin decreased by 97.5%,and the content of protein decreased by 92%.The content of total sugar,total acid and vitamin C did not change significantly,and the nutrient loss was less.
