摘　　要：能量饲料成本约占饲料总成本的70%,这意味着提高脂肪的消化率和增加饲料能量利用效率就可以降低饲料成本,提高生产的经济性和可持续性。乳化剂是一种同时具有亲水性基团和疏水性基团的分子表面活性剂,目前在饲料工业中得到广泛应用。文章针对乳化剂的种类、乳化剂促进反刍动物脂肪消化吸收的机理、添加乳化剂的必要性及其在动物生产中的应用进行综述。Energy accounts for about 70%of the total feed cost,which means that improving fat digest⁃ibility and energy efficiency of feed can reduce feed cost and improve the economy and sustainability of animal production.Emulsifier is a kind of molecular surfactant with both hydrophilic and hydrophobic groups,which is widely used in feed industry.This article reviews the types of emulsifiers,the mecha⁃nism of emulsifiers promoting fat digestion and absorption in ruminants,the necessity of adding emulsifi⁃ers and their application in animal production.
