摘　　要：为确保采用自然补风和机械排风方式的小型商业暗厨房用气安全,选择某典型小型商业暗厨房为研究对象,采用通风效果现场测试与数值模拟相结合的方法,通过对其实际通风效果进行现场测试与评价,并基于计算流体动力学(CFD)建立典型小型商业暗厨房的通风数值模型,研究了大厅补风口有效面积、补风口布置形式和补风距离对暗厨房自然补风效果的影响,在此基础上提出了暗厨房补风措施优化设置建议。结果表明:当燃气灶具工作时,机械排风系统和暗厨房门应始终处于全开状态,且暗厨房总补风面积应大于该房间地板面积的0.0067倍;当大厅门可能关式暗厨房增设自然补风口时,可不考虑补风距离的影响,但暗厨房大厅补风口有效面积应大于该房间地板面积的0.0022倍,并建议均匀布置4个补风口。To ensure the safety of gas comsumption in small commercial dark kitchens,a typical small commercial dark kitchen was selected as the research object,and the actual ventilation effect with the natural air intake and the mechanical air exhaust was tested and evaluated on site combined with the numerical simulation.The numerical ventilation model based on the computational fluid dynamics(CFD)was established.Using a method of combining on-site testing and numerical simulation of ventilation effectiveness,through on-site testing and evaluation of its actual ventilation effectiveness,and based on computational fluid dynamics(CFD),a numerical ventilation model for a typical small commercial dark kitchen was est ablished.The effects of the effective area,lay out,and dist ance of the air supplement openings on the natural air supplement effectiveness of the dark kitchen were studied.Based on this,suggestions for optimizing the setting of air supplement measures for the dark kitchen was proposed.The results indicate that the mechanical exhaust system and the dark kitchen door should be fully opened when the gas stove is working;the total air supplement area of the dark kitchen should be greater than 0.0067 times the floor area of the room;the effect of the distance of air supplement can be ignored when the hall tuyere may be added to the kitchen.However,the effective tuyere area should be greater than 0.0022 times the floor area of the room,and it is recommended to evenly arrange four tuyeres.
