摘　　要：宋代是我国饮食史上的一个“盛期”,其食事活动的繁荣、思想的活跃,催生出一大批高质量的饮食养生类著作,无论是数量上还是质量上都堪称历朝之最。《山家清供》为南宋文人林洪所作,成书于宋景炎元年(1276年),是一部蕴含丰富饮食养生思想的笔记体食谱,共104篇,分上下两卷,以素食为主,内容涉及原料、制作方法及服法等方面,引经据典,食出有典,文辞优美,氛围闲适,颇具特色,兼具艺术审美价值与医疗养生价值,对今人饮食养生实践有着重要的指导意义。笔者基于对《山家清供》一书的分析研究,对书中蕴含的饮食养生思想进行归纳,总结为以下四方面:药食同源,食饮以疗;顺应自然,天人合一;五味调和,真味养生;崇尚清俭,食以养性。分别举例进行佐证阐释,以期对当今饮食养生理论与实践的发展起到一定启发作用。Song dynasty is a"flourishing period"in the history of Chinese diet.The prosperity of food activities and active thoughts in Song dynasty produced a large number of high-quality works on diet,which can be regarded as the most in the past dynasties both in quantity and quality.Shan Jia Qing Gong for the southern Song dynasty written by Lin Hong in the first year of Song Jingyan(1276),is a rich diet health ideas on the diet,a total of 104 articles,consists of two volumes,mainly vegetarian,covering raw materials,production methods and obey,allusions,food out of the Canon,a beautiful language,leisurely and comfortable atmosphere,characteristic,It has both artistic aesthetic value and medical health value,and has important guiding significance to the diet and health practice of modern people.Therefore,based on the analysis and research of the book Shan Jia Qing Gong,the author summed up the diet and health preservation thought contained in the book,summarized as the following four aspects:medicine and food homology,food and drink to cure;Conform to nature,unity of nature and man;harmony of five flavors,real taste health;advocating purity and frugality and nourishing nature with food,and illustrating with examples respectively,in order to enlighten the development of theory and practice of diet and health preservation.
