摘 要:食用菌为餐桌常见美食,具有高蛋白、高维生素、高纤维、低脂肪特点。我国食用菌种质资源丰富,具有多种特色珍稀食药用菌。美味扇菇,又称元蘑、冻蘑、亚侧耳,子实体味道鲜美,常在温度较低的东北地区栽培,是东北地区特色食用菌。具有助消化、降血压、抗氧化、增强免疫力等功效,营养价值和药用价值极高。美味扇菇研究主要集中在我国,国外研究较少。本文对珍稀食用菌美味扇菇形态学特征、食药用价值、活性成分、栽培管理、遗传育种等方面研究内容进行概述,提出目前研究中尚存在的一些问题,并对未来发展方向及前景进行展望,旨在为美味扇菇推广应用提供理论参考和指导。As a common food on people's table,edible fungi have the characteristics of high protein,high vitamin,high fiber and low fat.China has rich germplasm resources of edible fungi,which are rare edible and medicinal fungi with various characteristics.Sarcomyxa edulis,whose fruiting body tastes delicious,is often cultivated in the northeast region with low temperature,and is the characteristic edible fungus in the northeast region.It has the effects of aiding digestion,lowering blood pressure,antioxidation,strengthening immunity,etc.,and has h igh nutritional and medicinal value.S.edulis research is mainly concentrated in China,and foreign research is less.This paper summarizes the research contents of rare edible fungus S.edulis in terms of morphological characteristics,edible and medicinal value,active i ngredients,cultivation management,genetics and breeding,puts forward some existing problems in the current research,and looks forward to the future development direction and prospects,with the purpose of providing theoretical reference and guidance for the promotion and appli cation of S.edulis.
