咖啡渣对大杯蕈生长及主要品质影响

摘　　要：为利用当地的咖啡渣资源,减少环境污染,探讨咖啡渣栽培大杯蕈的可行性。按咖啡渣和棉籽壳干重不同的比例设计6个配方处理,常规配方为CK,采用单因素随机区组设计,以菌丝生长情况、单袋产量、农艺性状、营养品质、主要挥发性风味物质为评价指标,筛选咖啡渣替代棉籽壳的最佳比例。试验结果表明10%咖啡渣替代棉籽壳,菌丝洁白,长势强,生长健壮,生长速度与CK相当;单袋产量201.73 g,与CK差异不显著;商品性状好,表现朵型大,单朵重50.43 g,菌盖直径为11.61 cm,菌柄长16.69 cm,菌柄直径1.61 cm,菌盖厚度2.57 cm。栽培原料中添加10%~35%咖啡渣对大杯蕈的风味无显著影响。因此,大杯蕈生产中,配方1即咖啡渣10%、棉籽壳25%、木屑47%、麦皮16%、轻钙1%、石灰1%,可在大杯蕈生产中大面积推广使用。In order to make use of the local coffee residue resources and reduce environmental pollution,the feasibility of cultivating clitocybe maxima with coffee residue was discussed.Six formulas were designed according to different proportions of dry weight of coffee grounds and cottonseed hulls.The conventional formula was CK.A single factor randomized block design was used to select the best proportion of coffee grounds to replace cottonseed hulls by taking mycelium growth,single bag yield,agronomic properties,nutritional quality,and main volatile flavor substances as evaluation indicators.The results showed that:10% coffee grounds could replace cottonseed hull,and the mycelia were white,strong and healthy,and the growth rate was comparable to CK;The single bag yield is 201.73 g,which is not significantly different from CK;The product has good commercial properties,with a large flower shape,a single flower weighing 50.43 g,a cap diameter of 11.61 cm,a stipe length of 16.69 cm,a stipe diameter of 1.61 cm,and a cap thickness of 2.57 cm.The addition of 10%~35% coffee grounds to the cultivation materials had no significant effect on the flavor of mushroom.Therefore,Formula 1,namely 10% coffee grounds,25% cottonseed hulls,47% sawdust,16% wheat husks,1% light calcium and 1%lime,can be widely used in the production of clitocybe maxima.
