摘 要:试验旨在研究运输对湖羊屠宰性能、肉品质、血液激素及酶活水平的影响,以期为缓解羔羊运输应激、提高动物福利提供参考。选用平均体重相近、健康的4月龄湖羊公羔20只,随机均分成2组,对照组不运输;运输组经8 h长途公路运输,运输后第1天所有羔羊采血检测血清中相关激素水平及酶活性。两组分别随机挑选5只羔羊屠宰,取左侧背最长肌检测肉品质。结果表明:①两组羔羊体重、胴体重及屠宰率无显著差异(P>0.05);②运输组羔羊血清中皮质醇水平显著高于对照组(P<0.05);两组羔羊血清乳酸、葡萄糖、肾上腺素、非酯化脂肪酸、肌酸激酶、乳酸脱氢酶无显著差异(P>0.05);③对照组羔羊肌肉pH45 min及pH24 h显著高于运输组(P<0.05),肌肉pH差值显著低于运输组(P<0.05);运输组羔羊肌肉L45 min、b45 min及b24 h与对照组无显著差异(P>0.05),a45 min、L24 h及a24 h显著高于对照组(P<0.05);运输组肌肉剪切力显著高于对照组(P<0.05),蒸煮损失及滴水损失两组无显著差异(P>0.05)。综上,羔羊经8 h道路运输后产生了应激反应,代谢水平受到影响;运输应激对羔羊屠宰率无影响,但肌肉品质显著降低。This experiment was conduct to investigate the effects of transportation on slaughter perfor⁃mance,meat quality,blood hormones and enzyme activity of Hu lambs,so as to provide theoretical guid⁃ance for alleviating the transportation stress of lambs and improving animal welfare.Twenty 4-month-old Hu lambs with similar average weight were randomly divided into two groups:control group and transport group.The control group was not transported,and the transport group was transported by road for 8 hours.On the 1st day after transportation,blood samples were collected from all lambs in two groups,and the related hormones and enzyme activities in serum were detected,the longissimus dorsi muscle was taken to detect the meat quality after slaughter.The results showed that:①There was no significant difference on the body weight,carcass weight and slaughter rate of lambs in the two groups(P>0.05).②The serum COR of lambs in transport group was significantly higher than that in control group(P<0.05).There was no difference in serum LA,Glu,EPI,NEFA,CK and LDH between the two groups(P>0.05).③The muscle pH45 min and pH24 h in the control group was significantly higher than that in the transport group(P<0.05),and the pH descend⁃ing value was significantly lower than that in the transport group(P<0.05).The muscle L45 min,b45 min and b24 h of the transport group were not different from those of the control group(P>0.05),but a45 min,L24 h and a24 h were significantly higher than those of the control group(P<0.05).The muscle shear force of the transport group was significantly higher than that of the control group(P<0.05),and there was no difference in cooking loss and drip loss between the two groups(P>0.05).To sum up,the lambs had a stress reaction after 8 h road transportation,and serum met⁃abolic level was affected;Transportation had no effect on slaughter performance of lambs,but significant⁃ly reduced meat quality.
