摘  要:本文研究了湿法制备柠檬酸淀粉酯的工艺条件,详细考察了催化剂用量、反应时间、反应温度、pH值、柠檬酸质量分数等因素对柠檬酸淀粉酯取代度的影响。利用正交实验,确定了合成柠檬酸淀粉酯的最佳工艺条件:催化剂用量(催化剂占溶液的体积分数)为1.5%,反应时间为6 h,反应温度为145℃,p H值为2.5,柠檬酸质量分数为40%,淀粉与柠檬酸质量比为2.0∶1。在此工艺条件下,柠檬酸淀粉酯的取代度最高,可达0.159。In this paper,the preparation conditions of citrate starch by wet method were studied.The effects of catalyst dosage,reaction time,reaction temperature,pH value and citric acid concentration on the substitution degree of citrate starch was investigated.The optimum technological conditions for synthesis of citrate starch were determined by orthogonal test.The results showed that the highest substitution degree(0.159)of citrate starch was obtained under the preparation conditions as follows:catalyst dosage is 1.5%,reaction time is 6 hours,reaction temperature is 145℃,pH=2.5,citric acid concentration is 40%,mass ratio of starch to citric acid is 2.0∶1.
