摘 要:猴头菇是十分珍贵的食药用真菌,具有极高的营养价值。经研究在猴头菇子实体、菌丝体及发酵液中分离纯化可得到猴头菇多糖,其具有抗肿瘤、抗氧化、降低血糖血脂等多种药理作用。将从猴头菇多糖提取纯化、药理作用及产品开发等方面进行综合阐述,以期为其为猴头菇的进一步研究提供参考。The monkey head mushroom is a very valuable medicinal fungus with high nutritional value.It has been isolated and purified from the fruiting bodies,mycelium and fermentation broth to obtain polysaccharide,which has various pharmacological effects such as anti-tumour,antioxidant,blood sugar and blood lipid reduction.In this paper,the extraction and purification,pharmacological effects and product development of Monkey Head Mushroom polysaccharide will be comprehensively described in order to provide reference for further research of Monkey Head Mushroom.
