摘 要:冷藏水产品是优质动物蛋白的重要来源之一,低温物流过程中会受微生物侵染发生腐败变质而产生不良风味。腐败细菌在生长环境中能够依靠群体效应调控自身致腐行为。综述了水产品中的特定腐败菌及群体感应的研究进展和各类天然抑菌剂在水产中的应用,分析了目前腐败希瓦氏菌作为冷藏水产品优势腐败菌的腐败能力与群体感应的关系,提出了水产品腐败机理研究的新思路。Refrigerated aquatic products are one of the important sources of high-quality animal protein,and during low-temperature logistics,they can be contaminated by microorganisms and cause spoilage,resulting in poor flavor.In the growing environment,putrefaction bacteria can regulate their own putrefaction behavior by population effect.This paper reviews the research progress of specific spoilage bacteria and quorum sensing in aquatic products and the appli⁃cation of various natural bacteriostatic agents in aquatic products,and also analyzes the relationship between the putre⁃faction ability and quorum sensing of putrefaction ability of Shewanella putrefaciens as the dominant putrefaction in fro⁃zen aquatic products,and puts forward a new idea to study the spoilage mechanism of aquatic products.
