摘 要:利用不同的样品前处理方法及气相色谱-质谱分析技术对香精的水分、溶剂、挥发性香味成分组成和含量进行了分析,并结合“烟用天然香原料查询系统”及香精的主香韵特征,对香精中的天然香料和合成香料进行判别,从而解析香精成分并进行香精还原。结果表明,还原香精与原香精的色谱指纹图谱相似度达到98.3%,其整体香韵与原香精基本一致。方法综合仪器分析手段以及调香经验知识,为烟草香精的剖析和还原研究提供了一种思路。The moisture,solvent,volatile flavor components and their contents were analyzed by different sample pretreatment methods and gas chromatography-mass spectrometry.Combined with the Natural Flavor Inquiry System for Tobacco and the main aroma characteristics of the flavor,the natural and synthetic flavors in the flavor were discriminated,so that the flavor composition could be analyzed and restored.The results showed that the similarity of the chromatogram fingerprints of the restored flavor and the original flavor reached 98.3%,and their overall aroma was basically the same as the original flavor.The research provides a thought for the analyses and reduction of tobacco flavor by means of instrumental analysis and empirical knowledge of flavoring.
