摘 要:本试验在普通饲料的基础上降低不同程度的粗蛋白质含量到肉鸡日粮中,研究对其生长性能、肉品质及血液生化指标的影响。试验将200头健康肉鸡平均分为4组,分别为普通日粮饲养的对照组,在普通饲料的基础上降低1.0%粗蛋白质的试验Ⅰ组,在普通饲料的基础上降低1.5%粗蛋白质的试验Ⅱ组和在普通饲料的基础上降低2.0%粗蛋白质的试验Ⅲ组。试验结束后测定其生长性能、肉品质和血清指标。结果发现,在普通饲料并平衡氨基酸的基础上降低2.0%的粗蛋白质对肉鸡的生长性能有显著影响(P<0.05),而降低1.0%或者1.5%的粗蛋白质与对照组相比无显著影响;在普通饲料的基础上降低1.0%或者1.5%的粗蛋白质对鸡肉品质的a*值、b*值、L*值、pH值和滴水损失率无显著影响(P>0.05),但对鸡肉的剪切力分别比对照组提高了9.86%和22.0%(P<0.05);在普通饲料的基础上降低1.0%或者1.5%的粗蛋白质对肉鸡血清中的IgA、IgG、IgM等免疫指标无显著影响(P>0.05)。研究表明,在普通饲料的基础上降低1.5%的粗蛋白且平衡氨基酸,对肉鸡的生长性能、肉品质及血清指标无显著影响(P>0.05),并能提升鸡肉的剪切力,增加咀嚼性。This experiment aims to reduce the crude protein content to varying degrees on the basis of regular feed in the daily feeding of broilers,and study the effects on their growth performance,meat quality,and blood biochemical indicators.200 healthy broiler chickens were selected for the experiment and divided into four groups on average,namely the control group fed with regular diet,the experimental groupⅠthat reduced crude protein by 1.0%on the basis of regular diet,the experimental groupⅡthat reduced crude protein by 1.5%on the basis of regular diet,and the experimental groupⅢthat reduced crude protein by 2.0%on the basis of regular diet.After the experiment,its growth performance,meat quality,and serum indicators were measured.The results showed that reducing crude protein by 2.0%on the basis of regular feed and balancing amino acids had a significant impact on the growth of broilers(P<0.05),while reducing crude protein by 1.0%or 1.5%had no significant effect compared to the control group;Reducing crude protein by 1.0%or 1.5%on the basis of regular feed did not significantly affect the a*value,b*value,L*value,pH value,and drip loss rate of meat and chicken quality,but increased the shear strength of chicken by 9.86%and 22.0%,respectively,compared to the control group(P<0.05);Reducing crude protein by 1.0%or 1.5%on the basis of regular feed has no significant effect on immune indicators such as IgA,IgG,and IgM in the serum of broilers.The research results indicate that reducing crude protein by 1.5%and balancing amino acids on the basis of regular feed has no significant impact on the growth performance,meat quality,and serum indicators of broilers,and can improve the shear strength of broiler quality and increase chewing ability.
